Dalmation Cupcakes

Here’s a great recipe that I got from Allison @ A Glimpse Inside (check out her blog – she’ll definitely inspire you!).

It is super easy and they ARE DELICIOUS!

Here is all you need:

1 box of Betty Crocker Supermoist Devil’s Food Cake Mix
1 container of Betty Crocker Rich and Creamy or Whipped Vanilla Frosting
1 1/3 cups water
1/3 cup vegetable oil
4 eggs
1 1/2 cups semi-sweet chocolate chips
1/3 cup sugar
6 oz. of cream cheese (softened) – I ended up using 8 oz. Just because I didn’t want to waste the 2 oz!

Heat your oven to 350 degrees.  Cream the cream cheese, sugar, and 1 egg with mixer on medium speed until smooth.  Stir in 1 cup of the chocolate chips and set aside.

In a large bowl, beat cake mix, water, oil and 3 eggs on low speed for about 30 sec. Beat on medium speed for 2 minutes.

Divide batter among muffin cups (1/4 cup in each).  Top each with 1 HEAPING teaspoon (I used a Tablespoon) of the cream cheese mixture.

Bake 17-22 mins. or until the tops spring back when touched lightly.  Cool 10 minutes in pan.  Remove from pan and cool completely – about 30 minutes.

Aren’t they pretty?

Then, just frost! I used a bit of shaved chocolate on the top.

Mmmmm YUMMY good and moist.
