Cheesy Amish Breakfast Casserole

I hope you all enjoyed your Easter.
Ours was wonderful and the weather was perfect for our Easter egg hunt.

We had a crazy weekend (Saturday I turned the BIG 5-0) so Easter was very low-key.
So, I decided to have brunch.

The challenge was to find a menu
(besides pancake and waffles) that everyone – young and old would like.

We kept our menu simple:

Cinnamon Streusel Coffee Cake
Cheesy Amish Breakfast Casserole
Fruit Salad

I’m sharing the Cheesy Amish Breakfast Casserole recipe.

IT WAS DELICIOUS
and everybody liked it.
Definitely “Pin” worthy!

  3. Made this casserole for a Women’s Fellowship Breakfast yesterday. It was gone in a flash!! I received so many compliments on it. By the time I went through the serving line, it was gone! I didn’t even get to sample it, but I will take it from my friends that it was delicious. I will make this again, and hopefully I will get a chance to try it!

  4. Made this again for another Women’s fellowship breakfast, and it was gone in an instant! Except this time I got to try some of it! YUMMY! They wanted a “meat free” dish, so I omitted the bacon, but added a small can of diced green chilis. Perfect!!

  5. With kids I always have tater tots on hand but would have to remember to put hashbrowns on the grocery list… I can attest that this recipe is equally delicious with tots instead of the hashbrowns! Put a layer of tots (I don’t usually thaw them) in the bottom of your pan, then stir everything else together as directed without the potatoes and just pour it over the tots and cook.
