Link Party #18 Highlights – “Turning the Daunting Into the Do-able”

Hello Friends!  Welcome to the Highlights for #18 Link Party – “Turning the Daunting Into the Do-able”!  We had some great link ups this week.

First, I want to thank the people who left the sweet and thoughtful comments regarding the death of my dear, sweet mother-in-law.  We had a beautiful celebration of her life on Saturday.  She would have been pleased.  We will miss her so very much, but we know that we will one day see her again.

This next one that I’m featuring blows my mind.  Kristy from 4 the Love of Wood knocked herself out on this piece of furniture that she BUILT and put into her foyer.

Pretty cool huh? What’s so amazing about this piece of furniture?
It’s made with a curtain finial, a chandelier part, a foot board,
a picture frame, stair spindles and drawer faces.
Now that’s what I call AMAZING!!!!

This is a Martha Stewart Recipe and she says it’s delicious.
I’ll need to give it a try.
I have made Boef Bourguignon for the last few years on Christmas Eve.
I’ve never thought about making it into a soup.

Beautiful Woman’s Version of 1 Corinthians 13:1-8

And now I will show you the most excellent way,

If I speak of calorie content and fat grams, but do not have love,
I am only a resounding gong or a clanging cymbal.

If I have the gift of eating carrots instead of cake and can fathom all diet and exercise mantras,
and if I have enough muscle mass that can move mountains,
but do not have love, I am nothing.

If I give all my snacks to the poor and give over my body to the elliptical that I may boast,
but do not have love, I gain nothing (ain’t that the truth).

Love is patient, love is kind.  It doesn’t have perfectly manicured nails, it does not wear concealer, it is not a size 0.
It does not deprive itself, it is not self-destructive,
it is not easily angered when its roots show,
it keeps no record of food intake.

Love does not delight in Botox but rejoices with the truth.
It always protects, always trusts, always hopes, always perseveres.

A Sad Day To Celebrate

My heart aches for a special woman, my mother-in-law, who treated me like I was her own daughter.   My heart aches for my children who called her Muvie, who baked their favorite chocolate chip cookies, sewed their clothes and loved reading them books when they were children.   My heart aches for my husband who will miss his mother terribly.  She believed in her son and was so proud of what he had accomplished in life.

Constance Read Walter was truly an amazing woman.  A woman who was raised in a very wealthy family.  Who spent her summer’s in Capitola and San Francisco at the Sir Frances Drake Hotel.  A woman who graduated from UC Berkeley.  A woman who married an uneducated farmer’s son against the wishes of her father.  A woman who married for love and not for the acceptance of her family.  A woman who raised 6 children and was a grade school teacher.  A woman who loved her children, encouraged them to be whoever they wanted to be.  She was a woman who never judged and never had a bad thing to say about another human being. A woman with a sense of humor, a woman with the patience of a saint. A woman with wonderful stories and a song or poem always ready to be sung or told.  A woman with a love for animals.  A woman of faith.

Life will go on for us Muvie.  You’re laughter, smile and keds that matched every outfit will be missed.  Our life will never be the same and yet we will go on with re-telling your stories, singing your songs and remembering your smile.  We love you Muvie and know that you are dancing in heaven with the love of your life who has patiently been waiting for you.

Rest in peace Muvie.

I hope everyone is having an awesome week!  We have finally got some rain here in California.  Love seeing the snow on so many blogs!  I’m jealous.  I lived in Illinois when I was a kid and I still remember the snow in the morning and how quiet everything was…plus we had a snow day!

Kitchen Aid Art

My daughter ran across this website that customizes your kitchen aid! I don’t know about all of you, but I ♥ my kitchen aid!  It sits on my kitchen counter front and center.  I never put it away.  I love the idea of having a custom painted kitchen aid.  Except… the price tag is a bit steep.  Maybe if I hit another jackpot I could splurge and not feel guilty!

Spicy Chicken Curry

Spicy Chicken Curry
(Adapted from Tyler Florence’s Recipe)

4 boneless, skinless chicken breasts
1/4 cup cilantro (leaves chopped – plus more for garnish)
1 lemon (juiced)
2 Tablespoons butter
1 Tablespoon olive oil
2 yellow onions (cut into large chunks)
3 seeded jalapenos (chopped)
1 or 2 diced serano chili’s (this is optional because it makes it really spicy)
4 garlic cloves, minced
4 carrots (peeled, cut into large chunks – cook until just tender in the microwave)
2 Tablespoons tomato paste for red curry OR
1 cup of frozen peas with water blended until smooth for green curry
2 Tablespoons curry powder
1 cinnamon stick
1 Teaspoon red chili flakes
2 Teaspoons chicken bullion
2 (15 oz) cans coconut milk unsweetened
2 cups of chicken broth
Kosher salt and pepper to taste

Heat the butter in a large heavy bottomed skilled or dutch oven over medium heat.  Add onions, jalapenos, serranos (if desired) ginger and garlic.  Cook slowly until onions are very soft (about 15 minutes).  Add tomato paste OR pureed peas, curry powder, cinnamon stick and red chili flakes.  Stir.

Add coconut milk, chicken stock, chicken bullion, salt and pepper.  Stir well.

Bring back to a simmer.  Simmer until sauce has thickened (about 20 minutes).  Add 1/2 the lemon juice and the cut up chicken.  Simmer until chicken is cooked through (about 10-15 minutes). Add carrots.  Taste and adjust seasoning with remaining lemon juice, salt and pepper.

Serve over piping hot sticky rice.  Garnish with fresh cilantro.

Serves 4
